(1/2 cup) 4 oz (110g) margarine
(1 cup) 200g sugar
(1 cup) 200g milk (non dairy can be used)
300g of dried fruits (raisins, sultanas, mix candied peel (candied orange and lemon))
(2 cups) 250g of flour
2 tbsp of mixed spice (cinnamon, coriander, dill, ginger, cloves, nutmeg)
Boil together the margarine, sugar, dried fruits.
Let it cool down so that the dried fruits can re-hydrate a little (twenty minutes).
Add the flour and the mixed spice and mix.
Add the beaten egg.
Cook in a preheated oven for one and a half hour at 150°C.
Comment: it keeps up to more than a month, so you can eat it without stuffing yourself!
