Polish soup (tomato soup with peas and vegan sausage)

Vegetarian, Bento, Cuisine, Recipes, Zoé

(for two)
2 vegan sausages
1 onion
2 cup peas (I used frozen ones but when season fresh ones are better)
4 cups of tomato sauce (I used a frozen batch)
2 cups of vegetarian stock
2 tbsp of oil
1 tsp of chilli powder
1 tbsp of parsley (frozen or when season prefer fresh)

Mince the onion and slice the sausages.
In a deep frying pan, heat the oil, the spices and add the onion.
After a minute, add the sausages and cook until the onion are golden.
Add the tomato sauce and the stock to the pan.
After a minute add the peas and heat until they are hot and cooked.
Sprinkle with parsley and serve.
Quick and easy!

Certainly frugal lets see 1 for the beans two onions for 50 cents maybe. If you want more in it you could think about adding some carrots and celery I would saute first in a bit of oil with the chopped onion then add the other ingredients. You could also use chicken broth if you wanted.
