5 cups multi-grain flakes (I used: 3 of oat flakes, 1 cup of rice flakes, 1 cup of barley flakes 3 tbsp of puffed quinoa)
1 cup almonds coarsely chopped
1 cup of chestnut chopped
1/2 cup flax seeds
3/4 cup untoasted sesame seeds
1/2 cup light brown sugar
1/2 cup of dried coconut
2 teaspoons ground cinnamon
1 teaspoon dried ground ginger
1/4 teaspoon sea salt

1/2 cup unsweetened applesauce (or another unsweetened fruit puree)
1/4 cup honey or toffee
1/2 cup of boiling water
2 tablespoons vegetable oil (nut oil)

Preheat the oven to 300F/150C.
In bowl mix together the flaked grains, seeds and coconut.
Mix the applesauce with the water, honey, and oil and spices.
Mix the sweet sauce with the dry ingredients until thoroughly dispersed, then divide and spread the mixture evenly on two baking sheets.
Bake the granola for about 45 minutes, stirring every ten minutes, until the granola is deep golden brown.
Remove from oven, then cool completely.
Store the granola in an airtight container. It will keep for up to one month.
