(for 8 pancakes)
1 cup of all-purpose flour
1 tbsp baking powder
1/4 tsp of salt
1 cup of non-diary milk (soya or almond milk)
2 tbsp of nut oil
3 tbsp of apple juice concentrate or maple syrup
In a bowl combine the flour, the baking powder and the salt.
Add the milk, the oil and the sweetener.
Heat a pancake pan over medium heat with a few spray of oil.
Pour 1/8 of the batter in the pan.
Cook the pancake on one side until some bubble appear on the surface for four minutes at least.
Flip it over and cook the other side for 2 minutes until golden.
Cook the rest 1/8 at a time.
Serve with maple syrup, golden syrup or toffee.
