Vegan chocolate rice pie

Pastry ingredients
1/2 cup of all purpose flour
1 cup of barley flour
1/4 cup of nut oil
2 tbsp of potato starch
1/4 cup of water

Rice filling ingredients
1 cup of soy milk
1 cup of round rice
1 vanilla bean
1 cup of sugar
1 cup of unsweetened black chocolate
1 pinch of salt

Mix the pastry ingredients together.
Knead to obtain a homogeneous and smooth dough which can be lowered with a rolling pin.
Set aside in the fridge for at least twenty minutes.

In a saucepan, heat the milk and the sugar, the rice, the vanilla bean, and the salt.
At boiling point, lower the heat to minimum and cover. Cook for five more minutes.
Melt the chocolate using a bain marie.
Remove the vanilla bean.
Add the chocolate to the rice.

Roll down the pastry, and place in a pie pan.
Spread the chocolate rice in the pie.
Cook in pie in a preheated oven for 20 min for 150°C, with a bowl of boiling water.

Let the pie cool down for two hours.
Serve and enjoy.
