Mediterranean foil parcel


(for two little foil parcels as side dish)
2 tomatoes
1/2 aubergine
1/2 courgette
2 slices of lemon
1 tbsp of freshly minced thyme
1 tbsp of freshly minced basil
1 tsp of rosemary (here dried because it doesn’t grow on my window shelf)
salt, pepper,
foil or baking paper.

Prepare two squares of foil of 30cm/10inch.
Prepare one bowl with one litre hot water and a second with one litre of very cold water.
Stab the tomato with a fork and cut out a little cross at the top of the tomato. Plunge it into the hot boiling water for 30s, then plunge it into the cold water bowl.
Peel the tomato. Cut it into chunks and remove the seeds.
Finely slice the aubergine.
Cut the courgette into chunks.
In a each foil, delay half of the vegetables, the lemon slice, then top with the spices, salt and pepper.
In a preheaten oven at 360°F/180°F bake it for 30min, until the veggies are tender.
Open the foil and enjoy!
