Potato scones


(makes 10 little scones)
4 potatoes
1/2 soya milk
1/2 lemon
75g of whole wheat flour
1 tsp of baking soda
1 tsp of sugar
1 tsp of salt
1 tbsp of oil.

Peel and cut the potatoes into pieces. Boil it until soft. Smash the potatoes, add the soya milk and the juice of the lemon.
Set aside for 10 minutes so that the soya milk gets thicker.
Fold in the flour and the rest of the ingredients.
With a tablespoon form 10 little patties on an oven tray with paper wax.
Bake for 20 minutes at 180C.
