Beetroot coloured rice

1 beetroot
1 cup of rice
2 and a half cups of water.

Cut the beetroot into slices.
Then, cook all the ingredients all together over high heat until it the water boils. Then cover the pan with a lid and put over low heat until all the water is absorbed.
Take out the beetroot slices.

The rice has nearly no taste of beetroot though. It’s mainly just food colouring here.
